This renowned burger operation has been quite a trajectory for Nick Watkins who started the operation as a pop-up, then awards were won, bricks and mortar were got in Glasgow, the owners of the Gannet joined in, an Edinburgh venue opened up, more awards, etc. It’s a credit to the single-minded focus here that the top quality of the burgers has remained constant, including the must-try signature Top Dog (bone marrow and Roquefort butter, double bacon, caramelised onions and black truffle mayo). Sides are crispy wings (buffalo or gochujang) and/or fries (three varieties), and that’s it; burgers rule supreme here.
