This beautifully converted ship (commissioned by the Northern Lighthouse Board in 1963) is now a gorgeous floating hotel in Leith Docks, but you don’t have to stay overnight to explore at least some of her on-board beauty. The Lighthouse Hotel has built a solid reputation for high-end afternoon teas with fancy cocktails, but a recent relaunch of their evening dining menu also promises a raft of good things. Ship-smoked salmon, langoustine, venison and crab all make good use of Scotland’s larder, while the delightful surroundings place it very firmly in special occasion territory.
