La Garrigue

Perhaps the most specialised of all regional restaurants in the capital, Jean-Michel Gauffre's kitchen focusses uniquely on the Languedoc region of southwest France. So, expect rustic casseroles, fish soups and lavender-infused desserts from France's vivid culinary heart.

Far too many places claim to cook nothing but local, seasonal food (a glance at the menu normally provides grounds for severe suspicion), so credit to Blas for keeping a relatively steady eye on what they can source in the West Highlands and Islands of Scotland.
