Nothing beats freshly baked bread. The smell, the taste, the diversity – it is always hard to resist newly baked bread but it’s not always easy to find genuinely fresh, flavoursome products. In Scotland, we boast a small number of artisan bakers but one that really stands out for me is Edinburgh’s Ugly Bread – a new Scottish bakery tucked away on North Castle Street. Their wide range of products always promise quality tastes and textures.
The bakery serves surrounding hotels and restaurants but has also just started selling its products to consumers and diners. They make quality Scottish favourites, baked using traditional hand-craft techniques and recipes with a focus on taste. All ingredients used are natural and sourced locally and they offer a fantastic range of breads, scones, cakes and pastries – including truly Scottish fly cemetery – all prepared fresh on site throughout the day.
Master baker Graeme Ayton is always looking to try out new recipes and ideas. Soon they will be introducing butties, bran scones and some unique, fresh wild mushroom sausage rolls. It’s simple baking at its very best.
